Best Electric Knife Sharpener

There is an old adage among chefs that says more cooks have been cut by dull knives then by sharp ones. There is definitely some truth to that since a sharp knife will always cut down while a dull knife will easily slip on the various layers of onions, or a hard tendon in meat, or on a million other surfaces, and end up on your finger. However, giving a knife back its factory edge can be quite a challenge for many of us because, depending on the tool you use, it can take a lot of strength and even a lot of skill. The good news is that in recent years we have seen the emergence of the electric knife sharpener. It is an incredibly easy tool to use and, provided you have bought a good quality one, it can give your knives an even better edge than the one they came with from the factory. So we decided to test some of them out and came up with the following list of what we think are the top 5 best electric knife sharpeners on the market. We have prepared an in depth review for each one of them, detailing why we choose each one, so make sure to scroll past the list to decide exactly how much money you need to get the level of satisfaction you are looking for.

In all honesty we will have to admit that anyone of the first 3 products on our list of the top 5 best electric knife sharpeners is just about as good as the others. We actually had to feature all 3 precisely because they are all just as good but with tiny variations that may make them more interesting to one person or another. We liked the Chef’s Choice 130 because it has been the longest on the market and has a clear, prove track record. It uses 3 different knife grinders to sharpen, then hone and then polish your knife. Because there is an electric motor spinning the grinding surfaces at very high speeds you so not really need to spend a lot of time using each level of grinding. In fact all you need do is pull the knife a couple of times along each side of the sharpening surfaces and you are done. The level of sharpness you get from this very simple and quick process is truly impressive and, depending on the quality of the steel in your knife and what you are going to use it for, it will also keep its sharpness for a long time.

The reason why we liked the Wusthof 3 Stage Electric Knife Sharpener is the fact that it is designed and sold by one of the world’s leading knife manufacturers. Needless to say the product is just as good as the Chef’s Choice, but we believe the quality of the parts inside might be just that little better, making this an excellent choice for butchers or other professionals who tend to need their knives sharpened more often than your average family. It uses the same system of sharpening, honing and then polishing the edge of the knife to create a blade that is almost good enough to shave with. It’s also worth noting at this point that all 3 of these knife sharpeners can be used on both straight edge and serrated knives. They are all 3 extremely stable but the Wusthof seemed to be the sturdiest and the most reliable of all 3.

Our third choice as the best electric knife sharpener is the latest model from Chef’s Choice, the 1522. In all honesty it is just as good as the first 2 sharpeners we have talked about, but it does have one crucial technological advantage: it was designed to sharpen both regular knives and traditional sushi knives. That means the grooves on the sharpening slots are just that little bit wider and allow you to give your knife a 15 degree, one side angle, or a European style, both sides 20 degrees angle. Except for that the Chef’s Choice Model 1520 electric sharpening knife has the same features as the other 2, a diamond abrasive grinding stage, a truing stage and a polishing stage. The end result is just as good so the only reason why you may want to choose this sharpening knife is because you enjoy cooking Asian food.

Having settled the question of the absolute best products on the market we need to look at what the best product for some of our readers might be. That is to say not every household needs to spend a lot of money to get knives that would split a hair. The Presto 08800 EverSharp costs half of what our top 3 knives sharpeners cost and it does a pretty good job. It does away with the polishing stage, so it only sharpens and hones the knives which is more than enough to get you that high quality edge that will go through a ripe tomato or a hard turkey tendon with the same ease. The one thing to note though, is that the Presto 08800 EverSharp does not work on serrated knives.

If you want to try to go even cheaper, while still buying a machine that will sharpen your knives to an adequate level, you may want to go with the Smith’s 50005 Edge Pro. It uses the classical V shape to sharpen each side of the knife, but when it comes to the truing stage, it uses just a simple wedge polishing stones that does the job on both sides at once. In our experience, it does not provide an edge as fine as that you would get from the Presto EverSharp, but it does come close enough to make no difference. The one other thing to remember about botht he Presto and the Smith’s 50005 Edge Pro is that they are not quite as efficient as the Chef Choice or the Wusthof, so you will need to spend a little bit more time sharpening our knives with them.
